Morse's yellow eye beans are air dried, so require less soaking time than the usual kiln dried beans available in stores.


QUICK SOAK METHOD
      Our yellow eye beans can be  ready to cook in just one hour using the following method -
     Rinse beans and put in a large bowl. Cover well with boiling water and leave to soak for one hour. Rinse again. In a large saucepan, cover beans generously with fresh cold water, then bring to a boil and simmer gently for 20 minutes or until tender but with a little crunch (usually when the skins crack). At this stage the cooked beans may be frozen until required for your recipe, so to save time you can soak and pre-cook in bulk and freeze in recipe-sized batches. Then when you want baked beans, simply put the frozen beans in a pot (no need to thaw), add the other ingredients and cook as usual.
Of course you can still soak your beans in the traditional way - overnight in cold water - if you prefer.
